- Roughly grind the chillies, garlic along with a pinch of salt in a stone grinder/ mortar pestle,so that the seeds are intact.
- Now pour 1/2 cup water in a pan / kadai and add the Chilli paste, sugar,salt, Kashmiri Lal mirch powder, food color and boil it for 5 minutes. (Keep stirring frequently). Then add the lemon juice and cook for another 5 minutes or so, the liquid will reduce a bit.
- In the meanwhile, prepare the cornflour slurry with 1 tsp cornflour and 2 tbsps water. Add to the boiling sauce mixture and immediately stir so that no lumps form. Keep stirring till the sauce thickens to the desired consistency. It will take 2-3 minutes. Once it will cool and come to room temperature it will thicken more.
