Your hands can easily spread bacteria around the kitchen and on food. It’s important to always wash your hands thoroughly with soap and warm water:

Do not forget to dry your hands thoroughly as well, because wet hands disperse bacteria more readily. Keep worktops clean

You ought to shift dish cloths and tea towels frequently to avoid any bacteria growing on the substance. Separate raw food from ready-to-eat food

Raw foods such as fish, poultry and vegetables may contain harmful bacteria that can spread quite easily by touching:

other foods worktops chopping boards Knives

You should keep raw foods from ready-to-eat meals, like salad, bread and fruit. This is because these kinds of food won’t be cooked before you eat them, so any bacteria that get on the meals will not be murdered.

To help prevent bacteria from spreading:

Do not let raw food such as fish, poultry or veggies touch other food Do not prepare ready-to-eat food using a chopping board or knife which you’ve used to prepare raw food, unless they have been washed thoroughly Wash your hands thoroughly after touching raw meat, fish or vegetables and before you touch anything else Cover raw fish or meat and shop at the bottom shelf of the fridge where they can’t touch or drip onto other foods

Check the label

It is very important to read food labels to make sure everything you’re likely to use was stored correctly (based on any storage directions ) and that none of the meals is past its’use by' date.

Food that goes away fast usually has storage directions on the tag that say how long you can keep the food and whether it must go in the refrigerator.

This kind of food often has special packaging to help keep it fresh for longer. But it is going to go off immediately as soon as you’ve opened it. That is why the storage instructions also tell you how long the food will maintain once the packaging has been opened. By way of instance, you might see’eat within two days of opening' on the label. Use by dates

You will also see’use by' dates on food that goes off quickly. You shouldn’t use any food after the’use by' date even when the food looks and smells nice, because it may contain harmful bacteria. Best before dates

The’best before' dates indicated on many foods are more about quality than safety. If this date runs out, it doesn’t indicate that the food will be harmful, but its flavour, texture or colour might begin to deteriorate.

An exception to that can be eggs, which have a best before date of no longer than 28 days after they are laid. Following this date the caliber of the egg will deteriorate and if any salmonella germs are found, they could multiply to high levels and may make you ill.

If you plan on using an egg after its best before date, make certain you only use it in dishes where it’s going to be completely cooked, so that both white and yolk are solid, such as in a cake or even as a hard-boiled egg.
