Steps to make Sambhar:
- Soak tamarind in 1/4 th cup warm water.Soak dal with warm water for 15 minutes.Cube brinjal, lauki and pumpkin into 1 inch pieces.Cut carrots into small pieces.Chop beans.Chop onion and tomato.Boil all vegetables except brinjal with red chillies,chopped coconut and onion with 1/2 tsp salt.Add tamarind pulp.Pressure cook dal with turmeric and little salt upto 2 whistles.Open lid after 5 minutes.
- Add sambar masala to the dal.Heat oil and lightly fry brinjal till soft.Add vegetables and tomato puree to the boiled dal and boil.Heat oil and sprinkle mustard,fennel and methi seeds.When they crackle,sprinkle 1 pinch hing and curry leaves and fry.Add this to the dal and boil.Adjust salt and pinch of sugar.Serve hot with rice,idli,vada,dosa or uttappam.
