- Provide 2 tbsp Vegetable oil, to fry
- Use 1 kg mince
- Get 2 onions, thinly sliced
- Provide 5 cloves garlic, minced
- Provide 500 ml freshly brewed coffee
- Prepare 2 chipotle/Ancho chillies
- Use 2 fresh long green chillies
- Take 1 tsp Ground cumin
- Use 1 tbsp Oregano
- Take 1 tbsp Muscovado sugar
- Get 2 tsp chilli powder, or to taste
- Take 400 g cooked kidney beans

- Heat the oil in a large frying pan on a high heat, then brown the mince in batches transferring to the Instant Pot once brown (I leave the pot turned off until everything is added).
- Fry the onions until slightly browned and add to the pot afterwards.
- Chop up both chillies and add to the Instant Pot.
- Stir in the oregano, cumin, chilli powder and crushed garlic.
- Add the coffee and a generous pinch of salt and set the Instant Pot for 25 minutes on the Meat | Stew setting
- Once the cycle has completed, allow a natural release for 10-20 minutes and then switch to the simmer setting, add the beans and cook-off some of the liquid and thicken up the chilli.
- If possible, leave overnight and reheat to serve.
